Time lapse photography is the effect created when a sequence of photographs are taken with a low frame rate and then played back with a higher frame rate creating the effect that time has been sped up. A great example of when time lapse photography could be used would be the growth of a flower, which would usually take days to watch but can be processed into a short clip only several minutes long.

This video showing three hours of footage of a runway at Gatwick airway in only a few minutes is another great example of time lapse photography.
